A Fresh and Juicy Rocket, Orange & Pomegranate Salad for Summer



This Rocket, Orange & Pomegranate Salad is not only perfect summer but also is a great option for a holiday dinner this season. The pomegranates just give off a bit of the holiday spirit whilst making this dish taste even better.


Feel free to serve this as it is or think about serving it with a veggie burger patty, tofu skewers or whatever your heart desires.

Rocket, Orange & Pomegranate Salad


Serves: 6

Time: 15 minutes

Quick, Gluten Free, Dairy Free, Egg Free


Ingredients:

  • 200g rocket

  • 60g pecans

  • 100g pomegranate seeds

  • 3 medium oranges


Method:

  1. Wash and dry the rocket and divide between plates. Roast the pecans.

  2. With a sharp knife, cut off the top and the bottom of the oranges and cut away the remaining peel and white pith. Next, cut along either side of each segment to release it.

  3. Place the orange segments on the rocket, sprinkle with pomegranate seeds and roasted pecans. Drizzle your favourite dressing over the salad.

Notes: A lemon mustard dressing would go well.
