Tomato-based pasta is the easiest to make and the great thing about this recipe is you can really make it your own. To make it more nutritious think about adding lentils, chickpeas, carrot, broccoli and more.

Easy Napoli Pasta
250g of your favourite pasta or zucchini noodles
2 tsp garlic, minced
1 large onion, finely diced
800g diced tomatoes
4 tbsp tomato paste
1 tbsp mixed herbs
1 tbsp coconut sugar or maple syrup
1 tsp paprika
1/2 cup fresh basil, roughly chopped
2 large handfuls of spinach
In a large saucepan over medium-low heat add 2tbsp water, onion and garlic. Cook until onion is soft.
Then add diced tomatoes, tomato paste, mixed herbs, coconut sugar and paprika. Bring to a simmer over medium heat. Then reduce heat to low and simmer uncovered for 30 minutes. Stirring occasionally.
Add basil and spinach and stir. Cook for 5 more minutes.
In a large saucepan of boiling water, add pasta and cook until al dente.
If the sauce has thickened too much at this point, thin with a little water. Although I prefer mine thicker and leave it on the thick/chunky side.
Transfer pasta and sauce to a serving bowl and top with fresh basil.
