If you live in the southern hemisphere it is summer at the moment. And at my house, that tends to mean a lot of barbeques which also means sometimes a lot of burgers. Which also means I have lots of different recipes for burgers, but this one is one of my favourites. It's simple and delicious.

Chickpea & Corn Burgers
Serves: 8 Patties
Time: 40 minutes
Meal Prep Friendly, Gluten Free, Nut Free, Dairy Free, Egg Free
400g chickpeas, cooked
3 tsp garlic, minced
1 small onion, diced
1 tsp oregano, dried
1 tsp chilli powder (optional)
1 tsp cumin, ground
1 tsp paprika, ground
1 lime, juiced
130g sweetcorn, cooked
1 capsicum, diced
1 lime, zest
1/4 cup ground almonds
2 tbsp chickpea flour
Preheat the oven to 210C (420F).
Place the chickpeas, garlic, onion, spices and lime juice in a food processor, blitz until smooth. Transfer into a large bowl.
Add in the sweetcorn, capsicum, lime zest, and flour and mix well.
Roll the batter (an amount equal to 1/3 cup) into balls and shape into burgers.
Next place in the burgers on a baking tray lined with a baking sheet and bake in the oven for 25-30 minutes or until browned. Allow to slightly cool before serving.
