Summer Time Plant-Based Chickpea & Corn Burgers

If you live in the southern hemisphere it is summer at the moment. And at my house, that tends to mean a lot of barbeques which also means sometimes a lot of burgers. Which also means I have lots of different recipes for burgers, but this one is one of my favourites. It's simple and delicious.

Chickpea & Corn Burgers

Serves: 8 Patties

Time: 40 minutes

Meal Prep Friendly, Gluten Free, Nut Free, Dairy Free, Egg Free


  • 400g chickpeas, cooked

  • 3 tsp garlic, minced

  • 1 small onion, diced

  • 1 tsp oregano, dried

  • 1 tsp chilli powder (optional)

  • 1 tsp cumin, ground

  • 1 tsp paprika, ground

  • 1 lime, juiced

  • 130g sweetcorn, cooked

  • 1 capsicum, diced

  • 1 lime, zest

  • 1/4 cup ground almonds

  • 2 tbsp chickpea flour


  1. Preheat the oven to 210C (420F).

  2. Place the chickpeas, garlic, onion, spices and lime juice in a food processor, blitz until smooth. Transfer into a large bowl.

  3. Add in the sweetcorn, capsicum, lime zest, and flour and mix well.

  4. Roll the batter (an amount equal to 1/3 cup) into balls and shape into burgers.

  5. Next place in the burgers on a baking tray lined with a baking sheet and bake in the oven for 25-30 minutes or until browned. Allow to slightly cool before serving.
